Camarones Empanizados (Breaded Shrimp)

Ingredients

  • 1 lb large shrimp, peeled, deveined, and butterflied
  • Spanglish Asadero Garlic Salt Seasoning, to taste
  • Black pepper, to taste
  • 2 eggs
  • Additional Spanglish Asadero Garlic Salt seasoning, to season the eggs
  • All-purpose flour, for dredging
  • Breadcrumbs, for coating
  • oil, for frying

For the Creamy Chipotle Sauce

  • 3 tablespoons sour cream
  • 1 tablespoon mayonnaise
  • 4–5 canned chipotle peppers (adjust to your preferred spice level)
  • A pinch of salt
  • Fresh lime juice, to taste

Golden Garlic

Directions
  1. Peel, devein, and butterfly the shrimp. Season them with Spanglish Asadero Garlic & Salt seasoning and black pepper.
  2. In a bowl, whisk the eggs and season them with a little more Spanglish Asadero Garlic & Salt seasoning.
  3. Coat each shrimp in flour, dip it into the seasoned egg mixture, then coat it evenly with breadcrumbs.
  4. Heat enough vegetable oil in a skillet over medium-high heat. Fry the shrimp for 3–4 minutes per side, or until they are golden brown and cooked through.
  5. Transfer the cooked shrimp to a plate lined with paper towels to drain any excess oil.
  6. To make the creamy chipotle sauce, blend together the sour cream, mayonnaise, chipotle peppers, a pinch of salt, and fresh lime juice until smooth and creamy.
  7. Serve the crispy shrimp with rice, a fresh salad, and the creamy chipotle sauce for a delicious meal. Enjoy!
