Camarones Empanizados (Breaded Shrimp)
Ingredients
- 1 lb large shrimp, peeled, deveined, and butterflied
- Spanglish Asadero Garlic Salt Seasoning, to taste
- Black pepper, to taste
- 2 eggs
- Additional Spanglish Asadero Garlic Salt seasoning, to season the eggs
- All-purpose flour, for dredging
- Breadcrumbs, for coating
- oil, for frying
For the Creamy Chipotle Sauce
- 3 tablespoons sour cream
- 1 tablespoon mayonnaise
- 4–5 canned chipotle peppers (adjust to your preferred spice level)
- A pinch of salt
- Fresh lime juice, to taste
Directions
- Peel, devein, and butterfly the shrimp. Season them with Spanglish Asadero Garlic & Salt seasoning and black pepper.
- In a bowl, whisk the eggs and season them with a little more Spanglish Asadero Garlic & Salt seasoning.
- Coat each shrimp in flour, dip it into the seasoned egg mixture, then coat it evenly with breadcrumbs.
- Heat enough vegetable oil in a skillet over medium-high heat. Fry the shrimp for 3–4 minutes per side, or until they are golden brown and cooked through.
- Transfer the cooked shrimp to a plate lined with paper towels to drain any excess oil.
- To make the creamy chipotle sauce, blend together the sour cream, mayonnaise, chipotle peppers, a pinch of salt, and fresh lime juice until smooth and creamy.
- Serve the crispy shrimp with rice, a fresh salad, and the creamy chipotle sauce for a delicious meal. Enjoy!
