Loaded Potatoes with Ground Beef (Papas Rellenas de Carne Molida)

Ingredients

  • 3 large potatoes, washed and dried
  • 1 lb ground beef
  • Salt, to taste
  • Black pepper, to taste
  • Paprika, to taste
  • 3 tablespoons Spanglish Asadero Golden seasoning
  • ½ white onion, finely chopped
  • 5–6 mushrooms, finely chopped
  • 1 tomato, finely chopped
  • 1 tablespoon Spanglish Asadero Golden Garlic seasoning
  • ⅓ cup milk or heavy cream
  • 1 cup shredded mozzarella cheese
  • Oil, as needed

Directions
  1. Prepare the potatoes:
    Wash the potatoes thoroughly and pat them dry. Rub each potato with a little oil and sprinkle with salt, making sure to coat them evenly. Wrap each potato in aluminum foil.
  2. Bake the potatoes:
    Place the wrapped potatoes in an air fryer or oven and cook at 400°F for approximately 1 hour, or until the potatoes are very soft and tender.
  3. Prepare the ground beef:
    While the potatoes are cooking, heat a skillet over medium heat. Add the ground beef and season with salt, black pepper, paprika, and 3 tablespoons of Spanglish Asadero Golden seasoning. Mix well, cover, and cook for about 10 minutes.
  4. Add the vegetables:
    Add the chopped onion, mushrooms, and tomato. Mix everything together, cover, and cook for another 10 minutes, or until the beef is fully cooked and the vegetables are tender.
  5. Prepare the potato filling:
    Once the potatoes are tender, carefully remove them from the foil. Make a cut lengthwise across the middle of each potato, being careful not to cut all the way through. Scoop out the potato flesh and place it in a bowl.
  6. Make the cheesy potato mixture:
    Season the potato with a little Spanglish Asadero Golden Garlic seasoning. Add ⅓ cup of milk or heavy cream and about 1 cup of shredded mozzarella cheese. Mix everything very well until creamy and combined.
  7. Stuff the potatoes:
    Add some of the cheesy potato mixture back into each potato. Top with the seasoned ground beef, then add another layer of the potato mixture.
  8. Add more cheese:
    Sprinkle additional shredded mozzarella cheese on top.
  9. Final bake:
    Return the stuffed potatoes to the oven and bake for approximately 8 minutes, or until the cheese is melted and the tops are golden brown.
